Caribbean Chicken Salad
3 cups of cooked chicken or fish
½ cup of mild or hot salsa
½ cup of too-tee fruity salsa
4 tablespoons vegetable oil
4 tablespoons balsamic vinegarette
2 pinches of salt and pepper
3 cups of chopped-bitesize lettuce
1 cup of shredded cheese of your choice, my fav is pepper jack
1 lemon
1 lime
1 cup of crumbled crackers or chips
In a bag or bowl add the chicken (or fish), 2 tblspns of oil, 2 tblspns of balsamic, mild (or hot) salsa and salt and pepper. Using your hands mix the ingredients together. Once the chicken seems well covered put the bag or bowl in the fridge. While the chicken marinates, prepare the salad in a large bowl. Rinse, drain & rip the lettuce into bite size pieces and mix with balsamic vinagerette, shredded cheese and too-tee fruity salsa. Add the chicken mix and squeeze in the lemon & lime, then toss again. Sprinkle the crumbled crackers or chips on top.
Serves 4 people
